A Dolly Varden Cake (also known as a Princess Cake) is one that takes the form of a standing doll with a large flowing skirt.
The flowing skirt is the cake part and beautifully decorated to look like a rather fancy dress… and it’s delicious.
At Goldsteins, every cake we create (whether it’s a birthday cake or wedding cake) has its own personality and is handmade made right here in one of our local Gold Coast Bakeries.

Why is it called a Dolly Varden cake?
This cake is named after a Charles Dickens character (Dolly Varden) who became a popular craze in the mid nineteenth century.
Dolly Varden was a young, charming and fashionable girl who dressed in bright colours, bold patterns and many layers of fabric.
The novel (entitled Barnaby Rudge) was never one of Dickens’ big hits but the character named Dolly became incredibly popular.
